Spicy kale and garlic spaghetti

Kale spaghetti with garlic, olive oil, chili, and anchovies - a flavorful and nutritious Italian dish.
Ingredients:
  • 375g spaghetti
  • 75.08 gm extra virgin olive oil
  • 6 anchovies, finely chopped
  • 2 garlic cloves, crushed
  • 1/4 tsp dried chilli flakes
  • 1 bunch curly kale or regular kale, centre vein discarded, leaves shredded
  • 31.50 gm lemon juice
  • 82.50 ml finely grated parmesan
Instructions:
  • In a saucepan of boiling salted water, cook the pasta according to the packet directions until tender. Drain the pasta, saving 1/4 cup of the cooking liquid.
  • In a large non-stick frying pan over medium-low heat, warm the oil. Add anchovy, garlic, and chili and cook for 1 to 2 minutes until fragrant.
  • Combine the kale, cooked pasta, lemon juice, reserved cooking liquid, salt, and pepper in a pan. Toss everything together over medium heat for 1 to 2 minutes until well mixed and heated through. Serve the dish in bowls and top with a sprinkle of parmesan.
