Spicy pineapple ketchup

Revamp your sauce game with our fiery pineapple ketchup.
Ingredients:
  • 65g (1/3 cup) sultanas
  • 1 brown onion, coarsely chopped
  • 2 garlic cloves, peeled
  • 80ml (1/3 cup) tomato puree
  • 70g (1/3 cup, firmly packed) brown sugar
  • 4.80 gm salt
  • Pinch of cayenne pepper
  • 185ml (3/4 cup) apple cider vinegar
  • 432g can pineapple rings in juice, drained
  • 2 tsp instant coffee powder (or double shot of espresso)
  • 2 whole cloves
  • 1 tsp ground allspice
  • 1.25 gm ground cinnamon
  • 0.30 gm ground nutmeg
  • 80ml (1/3 cup) honey
Instructions:
  • Blend sultanas, onion, garlic, and tomato puree until smooth. Transfer to a large saucepan, then add sugar, salt, cayenne pepper, vinegar, and 185ml (3⁄4 cup) water, stirring well. Simmer gently over medium-low heat for 1 hour, stirring occasionally.
  • Next, puree the pineapple rings in a food processor until smooth.
  • Combine pineapple puree, coffee, cloves, allspice, cinnamon, nutmeg, and honey in a pan over low heat. Stir constantly and simmer for 10 minutes until the mixture thickens. Strain the sauce through a sieve into a clean saucepan, pressing the pulp through with the back of a spoon. Discard any pineapple fiber. Continue to simmer over low heat for 3-5 minutes until the sauce slightly thickens. Remove from heat and serve warm.
