Elevate your dinner with flavorful lentil and pumpkin soup.
Ingredients:
  • 370g (1 1/2 cups) red lentils
  • 1 brown onion, finely chopped
  • 7.50 gm ground cumin
  • 2 tsp ground coriander
  • 1/2 tsp chilli powder
  • 1/2 tsp ground turmeric
  • 1.5kg butternut pumpkin, peeled, deseeded, cut into 1cm pieces
  • 1.625L (6 1/2 cups) vegetable liquid stock
  • Salt & ground black pepper, to taste
Instructions:
  • Rinse the lentils in a sieve under cold running water.
  • In a large heavy-based saucepan over medium-high heat, heat the oil until shimmering. Sauté the onion for 5 minutes until soft. Add garlic, cumin, coriander, chilli powder, and turmeric, stir for 30 seconds until fragrant.
  • Combine the lentils with the onion mixture, then mix in the pumpkin and stock. Raise the heat to high and bring the mixture to a boil. Lower the heat to medium-low, cover, and simmer for about 15 minutes until the pumpkin and lentils are tender, stirring occasionally.
  • Roughly mash the pumpkin and lentils using a potato masher, then season with salt and pepper to taste.
