Elevate your ribs with a spicy curry vindaloo twist!
Ingredients:
  • 1.2kg beef ribs
  • 36.80 gm vegetable oil
  • 2 small red onion, cut into thin wedges
  • 375g Passage to India Vindaloo simmer sauce
  • 2 tsp mustard seeds
  • 1 tsp cumin seeds
  • 3 carrots, shredded
  • 82.50 ml coriander leaves
  • Steamed basmati rice to serve
Instructions:
  • Put the ribs in a saucepan and cover them with cold water. Bring to a boil over high heat and simmer for 25 minutes. Allow the ribs to cool in the liquid, then drain and slice into smaller pieces.
  • In a deep frying pan, warm half the oil over medium heat. Saute half the onion for 3 minutes until softened. Pour in the sauce and bring it to a boil. Add beef ribs, making sure they are coated in the sauce. Lower the heat, cover, and simmer gently for 1 hour until the beef is tender.
  • Next, warm up the remaining oil in a frying pan over medium heat. Saute the remaining onion for about 3 minutes until softened. Introduce mustard seeds and cumin seeds into the pan, cooking for 2 minutes until fragrant. Toss in the carrots and cook for an additional 3 minutes until slightly softened. Take off the heat and season with salt and white pepper. Before serving, garnish with coriander leaves. Plate the rice, then place the ribs on top with the sauce, and serve alongside the carrot salad.
