Butter-sauteed spicy sausage, spinach, and mushrooms mixed with creamy ricotta over fettuccine.
Ingredients:
  • 8 ounces fettuccine
  • 1 teaspoon butter
  • 3 cups sliced mushrooms
  • 0.5 pound bulk spicy pork sausage
  • 1 (10 ounce) package frozen chopped spinach
  • 6 ounces ricotta cheese
  • 1 teaspoon lemon juice, or to taste
Instructions:
  • Fill a large pot with lightly salted water and bring it to a vigorous boil. Add the fettuccine and cook over medium heat until al dente, about 8 minutes. Drain the pasta and transfer it to a serving bowl.
  • In a large saucepan, melt butter over medium heat. Cook mushrooms and sausage in the butter until mushrooms are tender and sausage is browned and crumbly, about 10-12 minutes. Add spinach to the mixture and cook until heated through, about 5-10 minutes. Remove from heat.
  • Mix the ricotta cheese into the mushroom mixture thoroughly, then add the lemon juice. Pour this delicious mixture over the fettuccine and toss until all the pasta is coated evenly.
