Quick and easy microwave lasagnas - ready to enjoy in under 20 minutes!
Ingredients:
  • 4 fresh lasagne pasta sheets
  • 280g pkt baby spinach
  • 1 medium zucchini, coarsely grated
  • 500g fresh firm ricotta
  • 40.00 ml chopped fresh dill, plus extra, to serve
  • 1/2 tsp freshly grated nutmeg
  • 1 lemon, rind finely grated
  • 21.00 gm fresh lemon juice
  • 1 egg, lightly whisked
  • 40g (1/2 cup) grated parmesan
  • 500g bottle passata
  • 300g (3 cups) coarsely grated mozzarella
Instructions:
  • Cut each pasta sheet into 6 pieces and place them in a shallow heatproof dish. Cover the pasta with boiling water and let it sit for 5 minutes to soften before draining.
  • In a large heatproof bowl, place the spinach and cover it with boiling water. Let it sit for 1 minute to wilt before draining. Rinse the wilted spinach under cold running water, squeeze out excess water, and coarsely chop. Then proceed to squeeze the liquid from the zucchini.
  • Mix together the spinach, zucchini, ricotta, dill, nutmeg, lemon zest, lemon juice, egg, and 1/3 cup of parmesan in a large bowl. Add seasoning to taste.
  • Spray six 400ml microwave-safe mugs with oil. Add 1 tablespoon of passata to each mug followed by a pasta square and 2 tablespoons of ricotta mixture, spreading evenly. Layer with 1 heaped tablespoon of mozzarella and another tablespoon of passata. Repeat layering two more times. Finish with remaining pasta, parmesan, and mozzarella.
  • Place 3 mugs in the microwave, cover loosely with plastic wrap, and microwave on High for 2 minutes. Remove the plastic wrap. Microwave on High for an additional 1 minute, or until the cheese is bubbling. Let it sit for 1 minute to cool slightly. Repeat with the rest of the mugs. Season and garnish with extra dill, if desired.
