Spinach & ricotta pie

Easy, affordable, and perfect for summer - freeze this make-ahead pie for a quick and convenient treat anytime.
Ingredients:
  • 2 bunches (about 260g) English spinach, ends trimmed, washed
  • 900g reduced-fat fresh ricotta
  • 2 eggs
  • 2 egg whites
  • Pinch of ground nutmeg
  • 40.00 ml chopped fresh continental parsley
  • Olive oil spray
  • 8 sheets filo pastry
  • Mixed salad leaves, to serve
Instructions:
  • - Preheat your oven to 180°C. - Place the spinach in a large, shallow microwave-safe dish with water clinging to the leaves. - Cover and microwave on High for 1-2 minutes until the spinach wilts. - Allow the spinach to cool and then squeeze out excess moisture. - Finely chop the spinach.
  • In a large bowl, combine ricotta and mash it until almost smooth using a potato masher. In a separate bowl, whisk together eggs and egg whites, then mix with the ricotta. Add nutmeg, salt, and pepper, stirring until fully combined. Fold in the spinach and parsley.
  • 1. Prepare the ovenproof dish by greasing it with olive oil spray. 2. Lay out the filo sheets on a clean work surface and cover with a dry and damp tea towel to prevent drying out. 3. Spray one filo sheet with olive oil and place it in the dish, allowing the edges to overhang. 4. Repeat the process with the remaining filo sheets, overlapping each one slightly, and spraying with olive oil between layers.
  • Spread the flavorful spinach mixture evenly over the filo in the dish, carefully fold over the edges to seal in the delicious filling, and give it a light spritz of olive oil spray for a golden, crispy finish.
  • Bake until the pastry turns golden and the filling sets, about 40-45 minutes. (For freezing, refer to tips section)
  • Enjoy this delicious dish warm or at room temperature alongside a fresh mixed salad.
