Kid-friendly soup with spinach and beet puree, featuring orzo pasta.
Ingredients:
  • 1 cup orzo pasta
  • 4 cups fresh spinach
  • 0.5 cup canned sliced beets
  • 2 cups water, or to taste
  • 1 teaspoon thyme
  • 2 tablespoons sour cream
  • 0.25 cup shredded Cheddar cheese
Instructions:
  • 1. Boil a large pot of lightly salted water. Cook orzo in the boiling water, stirring occasionally until al dente, about 11 minutes. Drain, saving some of the cooking water.
  • Blend spinach and beets in a blender with reserved water as needed until creamy.
  • In a large pot over medium heat, melt butter. Add blended spinach mixture and cook until the color starts to change, for about 5-7 minutes. Thin the mixture with water, then stir in drained orzo pasta. Season with thyme, salt, and pepper. Remove from heat and stir in sour cream. Serve hot, topped with Cheddar cheese.
