Cheesy Spinach Enchiladas with Green Salsa. Optional: Lighten up with yogurt instead of sour cream. Irresistible even to vegetable skeptics.
Ingredients:
  • 1 cup light sour cream
  • 1 (7 ounce) can green salsa
  • 1 bunch fresh spinach, rinsed and thinly sliced
  • 2 cups shredded Monterey Jack cheese
  • 1 (10 ounce) package corn tortillas
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Combine half of the sour cream with the green salsa in a small bowl. Spread a sufficient amount on the bottom of a 9x13 inch baking dish. Spread some of the salsa and sour cream mixture onto each tortilla. Place a small handful of spinach on top, sprinkle with Monterey Jack cheese, roll up, secure with a toothpick, and arrange in the baking dish. Once all tortillas are in the dish, pour the remaining salsa on top and sprinkle with the remaining cheese.
  • Bake until enchiladas are golden brown and heated through, about 20-25 minutes in the preheated oven.
