Whip up a tasty spinach frittata with ham, bell pepper, onion, and cheese for a speedy and satisfying brunch using just one skillet.
Ingredients:
  • 0.5 cup red bell pepper, cut into thin matchsticks
  • 0.5 cup chopped onion
  • 3 large eggs
  • 0.5 cup milk
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 cup chopped cooked ham
  • 0.5 cup crumbled feta cheese
Instructions:
  • In a skillet over medium heat, sizzle red pepper and onion in olive oil until tender, stirring occasionally, for about 5 minutes.
  • Whisk eggs and milk until smooth in a bowl; fold in spinach, ham, mozzarella cheese, feta cheese, salt, and black pepper. Carefully combine ingredients; transfer to the skillet.
  • Cover the skillet and cook until the egg mixture is fully set in the center, for about 7 to 10 minutes. Cut into wedges before serving.
