Indulgent British custard puddings, sprinkled with sugar, offer pure comfort.
Ingredients:
  • 150g self-raising flour
  • 250.00 ml fresh white breadcrumbs
  • 90g prepared suet mix (see Notes)
  • 75g caster sugar
  • 56.10 gm sultanas
  • 82.50 ml mixed peel
  • 160ml milk
  • 34.40 gm demerara sugar
  • Custard, to serve
Instructions:
  • Prepare four 200ml dariole moulds by greasing and lining the base.
  • In a bowl, sift flour and add breadcrumbs, suet, sugar, sultanas, and peel. Mix egg and milk, then combine with dry ingredients and beat until well mixed. Spoon the mixture into moulds. Create a pleat in the center of a piece of baking paper to allow for expansion and cover the pudding. Secure with string and foil.
  • In a saucepan, arrange moulds and fill with water halfway up the sides. Bring to a boil, cover, reduce heat to low, and steam for 1 hour. Let cool for 10 minutes. Unmold onto plates, dust with demerara sugar, and enjoy with custard.
