Fun and easy pie to make with kids - a delightful mess of ingredients!
Ingredients:
  • 1 x 270 g packet of filo pastry
  • 200 g baby spinach
  • 6 rashers of higher-welfare smoked streaky bacon
  • 6 large free-range eggs
  • 200 ml milk
  • 1 teaspoon mustard powder
  • ½ a bunch of fresh chives (15g)
  • 3 medium leeks
Instructions:
  • Preheat the oven to 180°C/350°F/gas 4 and lightly grease a 20cm x 30cm baking dish with oil. Arrange layers of pastry into the dish, overlapping slightly. Boil the kettle and wilt the spinach by pouring hot water over it in a colander. Squeeze out excess water and roughly chop the spinach. Grill the bacon until crisp. Whisk eggs with salt, pepper, milk, mustard powder, chives, and lemon zest. Mix crumbled bacon with spinach, leeks, and add to pastry. Pour over the egg mixture and bake for 30-40 minutes. Let the pie cool for 20 minutes before serving with a green salad. Enjoy!
