Spring vegetable bake with cheddar and parmesan sauce

Impressive entertaining recipe.
Ingredients:
  • 1/2 small cauliflower, cut into florets
  • 2 medium zucchini, thickly sliced
  • 1 bunch broccolini, cut into 5cm lengths
  • 150g snow peas, trimmed
  • 25g butter
  • 40.00 ml plain flour
  • 321.88 gm milk
  • 125.00 ml grated cheddar cheese
  • 40.00 ml grated parmesan cheese
Instructions:
  • Preheat the oven to 210°C/190°C fan-forced. Boil a large saucepan of salted water. Blanch cauliflower for 4 minutes until tender, then add zucchini, broccolini, and snow peas at 1-minute intervals. Drain the vegetables on paper towels. Place the blanched vegetables in a 6-cup ovenproof dish.
  • In a saucepan over medium-high heat, melt butter. Add flour and cook, stirring, for 2 minutes until bubbly. Remove from heat, then gradually stir in milk until smooth. Return to heat and cook for 2 more minutes until thickened. Stir in cheddar, season with salt and pepper, then pour over vegetables. Sprinkle with parmesan and bake for 15 minutes until golden. Let stand for 2 minutes, then serve.
