Spring Vegetable Frittata: Quick and easy breakfast ready in 35 minutes.
Ingredients:
  • 2 tablespoons margarine or butter
  • 1 clove garlic, finely chopped
  • 1 medium green or red bell pepper, chopped (1 cup)
  • 2 small zucchini, chopped (2 cups)
  • 1 small tomato, chopped (1/2 cup)
  • 1/4 teaspoon salt
  • 1 1/2 cups fat-free cholesterol-free egg product
  • 1/4 cup grated Parmesan cheese
Instructions:
  • Preheat oven to 375°F.
  • In a 10-inch ovenproof skillet, melt margarine over medium-high heat. Sauté onion and garlic for 3 minutes, stirring frequently. Add bell pepper, reduce heat to medium, and cook for about 2 minutes until crisp-tender. Stir in zucchini, tomato, salt, and pepper. Cook for 4 minutes, stirring occasionally. Finally, mix in the egg product.
  • Bake for 10 to 12 minutes until the center is set, then sprinkle with cheese and cut into wedges.
