Squash and Apple Soup

Hearty and healthy soup with butternut squash, apples, potatoes, and ginger.
Ingredients:
  • 2 teaspoons butter
  • 1 pound butternut squash, peeled and chopped
  • 2 apples, peeled and chopped
  • 1 small potato, peeled and chopped
  • 1 teaspoon grated fresh ginger root
  • 1 pinch white pepper
  • 4 cups water
  • 0.25 cup apple cider
  • 1 teaspoon packed brown sugar
  • 0.5 cup plain yogurt
  • 1 tablespoon finely chopped toasted pecans
Instructions:
  • Melt butter in a large saucepan over medium heat. Cook onion until softened, about 4 minutes. Add squash, apples, potato, ginger, pepper, and water. Bring to a boil, then simmer on low for 12-15 minutes until potatoes are tender.
  • Puree the soup in a food processor or blender until smooth. Transfer it back to the saucepan and stir in apple cider and brown sugar. Bring to a boil. Serve with a dollop of yogurt and a sprinkle of pecans for garnish.
