Delicious and untested member recipe.
Ingredients:
  • 300g brown sugar
  • 60.00 gm water
  • 300ml sweetened condensed milk
  • 30g cashew nuts, roughly chopped
Instructions:
  • In a saucepan, gently heat the sugar and water until the sugar starts to dissolve. Avoid stirring to prevent crystallization.
  • When the sugar has melted, add the condensed milk and stir continuously until the mixture thickens, becomes gooey, and changes color. This process requires patience. Allow the mixture to bubble until it transforms into a caramelized, gooey consistency. Avoid removing the mixture from the heat prematurely or letting it burn. An ideal sign that the mixture is ready is when it starts pulling away from the edges of the pan.
  • Just before removing the mixture from the heat, stir in the chopped cashews until well combined. Line a 20cm square baking tray (or smaller) with baking paper and lightly brush with butter.
  • When the mixture is prepared, smoothly pour it into the baking tray ensuring it is evenly spread. Allow it to cool for 5-10 minutes. It's best to cut the toffee when it is slightly unset in the middle for neat pieces.
