Festive green deviled eggs for St. Patrick's Day, featuring marbled halves filled with light green yolk and garnished with parsley.
Ingredients:
  • 12 eggs
  • green egg dye
  • 2 small stalks celery from the heart, minced
  • 0.25 cup mayonnaise
  • 2 drops green food coloring, or as desired
  • 24 small fresh parsley leaves
Instructions:
  • In a large saucepan, gently cover eggs with water, bring to a boil, then turn off the heat. Allow the eggs to sit in the hot water for 15 minutes. Transfer the eggs to a bowl of cold water or the refrigerator and leave them until they are cold, at least 30 minutes.
  • Follow package instructions to prepare egg dye in a large metal or glass bowl.
  • Crack eggs gently, keeping shells intact to allow egg dye to penetrate the whites.
  • In batches, immerse cracked eggs in dye until it subtly colors the eggs, approximately 5 minutes per batch.
  • Rinse the eggs and peel them to reveal the beautiful green marbled color; cut the eggs in half lengthwise.
  • Transfer the egg yolks to a medium bowl and mash them with a fork. Add celery and mayonnaise, mixing well to combine. Gently stir in the green food coloring for a vibrant touch.
  • Fill egg halves with the yolk mixture and garnish each with a fresh parsley leaf.
