St. Patrick's Day Zucchini-Oatmeal Cookies

Vibrant green oatmeal cookies made naturally, no food coloring needed!
Ingredients:
  • 0.5 cup butter
  • 0.75 cup white sugar
  • 1 egg
  • 0.5 teaspoon vanilla extract
  • 1.5 cups grated zucchini
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 1 cup quick cooking oats
  • 1 cup granola
  • 2 cups semisweet chocolate chips
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • In a medium bowl, whip up a fluffy mixture of butter and sugar. Add the egg and vanilla, mixing thoroughly. Fold in the shredded zucchini. Combine the flour, baking soda, and cinnamon, stirring into the zucchini mix. Lastly, gently incorporate the oats, granola, and chocolate chips.
  • Using a teaspoon, place dollops of dough on an ungreased cookie sheet with at least 2 inches of space between. Bake in a preheated oven for 10 to 12 minutes. Enjoy soft and moist cookies thanks to the zucchini.
