Elevate your tuna salad with crisp diced veggies for a refreshing and crunchy twist.
Ingredients:
  • 2 (5 ounce) cans albacore tuna in water, drained and flaked
  • 1 medium Roma tomato, cored and diced
  • 1 small shallot, diced
  • 0.5 cup diced English cucumber
  • 0.5 cup diced carrot
  • 0.5 cup diced jicama
  • 0.5 cup avocado ranch dressing, or to taste
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon lime juice
Instructions:
  • In a medium bowl, combine the tuna with tomato, shallot, cucumber, carrot, jicama, salad dressing, cilantro, salt, and pepper. Mix well until all ingredients are incorporated. Adjust seasoning to taste with salt, pepper, and lime juice.
