Ingredients:
  • 4.60 gm olive oil
  • 1 onion, halved, thinly sliced
  • 1 small red capsicum, deseeded, cut into 2cm cubes
  • 1 green capsicum, deseeded, cut into 2cm cubes
  • 1 zucchini, cut into 2cm cubes
  • 1 eggplant, cut into 2cm pieces
  • 400g can chopped Italian tomatoes
  • 62.50 gm water
  • 10.00 gm caster sugar
  • 4 beef sirloin steaks, trimmed
  • cooked couscous, to serve (see Notes)
Instructions:
  • In a large non-stick saucepan over medium heat, heat oil. Add onion and cook until soft, about 2 to 3 minutes. Stir in capsicum, zucchini, eggplant, tomatoes, water, vinegar, sugar, salt, and pepper. Increase heat to medium-high and bring to a boil.
  • Simmer and stir occasionally for 20 minutes until vegetables are tender and sauce thickens.
  • Preheat the barbecue to medium-high heat while you season the steaks with salt and pepper. Grill the steaks for 5 to 6 minutes on each side for a perfect medium doneness, or until cooked to your desired level.
  • Plate the steaks alongside a flavorful ratatouille and fluffy couscous.
