Coconut and brown sugar steamed custard puddings, a perfect finale to any Asian meal. Indulge in this elegant dessert sprinkled with toasted golden coconut.
Ingredients:
  • 35g (1/2 cup) shredded coconut
  • 250ml (1 cup) coconut cream
  • 250ml (1 cup) milk
  • 4 eggs, lightly whisked
  • 2 egg yolks
  • 60g (1/3 cup, lightly packed) brown sugar
Instructions:
  • Toast coconut in a large frying pan over medium heat, stirring occasionally, for 1-2 minutes until golden brown. Transfer to a heatproof bowl.
  • In a small saucepan, gently heat the coconut cream and milk together until simmering. Remove from heat.
  • Whisk the egg, egg yolks, and sugar in a heatproof bowl using a balloon whisk. Slowly incorporate the coconut cream mixture, whisking until smooth. Divide the mixture evenly among six 185ml (3/4-cup) heatproof bowls.
  • Steam the custards in a bamboo steamer over simmering water in a wok for 25-30 minutes, ensuring the steamer doesn't touch the water, until the custard is just set.
  • Sprinkle toasted coconut over the custards before serving.
