Ingredients:
  • 500g pork mince
  • 60ml (1/4 cup) sweet soy sauce
  • 1 long red chilli, deseeded, finely chopped
  • 20.00 ml chopped fresh coriander
  • 1 x 300g pkt pad thai noodles (Trident brand)
  • 40.00 gm water
  • 4 green shallots, ends trimmed, diagonally sliced
  • Coriander leaves, to garnish
Instructions:
  • In a bowl, mix together the mince, 2 tablespoons of soy sauce, chilli, and coriander. Shape the pork mixture into 16 equal-sized balls. Steam the pork balls over simmering water for 5-7 minutes or until fully cooked. (Refer to microwave instructions if desired).
  • Cook the noodles in a saucepan of boiling water for 4 minutes until tender. Drain well. Mix 2 tablespoons of water and the flavoring sachets from the noodles in the same saucepan. Heat over medium heat for 1 minute until hot and aromatic. Add the noodles and shallots, tossing gently until well combined.
  • When ready to serve, distribute the noodles evenly into bowls, place the pork balls on top, generously drizzle with the remaining soy sauce, and finish with a sprinkle of fresh coriander.
