Steamed snapper with sesame snow peas recipe

Irresistible steamed snapper with sesame snow peas for a light dinner.
Ingredients:
  • 2 Snapper Fillets (about 300g each), halved crossways
  • 2 spring onions, thinly sliced, divided
  • 5cm-piece ginger, peeled, cut into matchsticks, divided
  • 60ml soy sauce
  • 18.00 gm sugar
  • 3 tsp sesame oil
  • 18.40 gm vegetable oil
  • 250g snow peas, trimmed, halved lengthways
  • 3.00 gm sesame seeds, toasted
  • 1 long red chilli, thinly sliced (optional)
  • 125.00 ml coriander leaves
Instructions:
  • 1. Preheat the oven to 230°C (210°C fan-forced) and line a 23cm x 33cm baking dish with baking paper. 2. Season the snapper with salt, then place it in the prepared dish. 3. Sprinkle half of the spring onions and half of the ginger around the snapper. 4. In a small bowl, whisk together soy sauce, sugar, sesame oil, and 1 tablespoon of water until the sugar dissolves. 5. Pour the soy sauce mixture around the snapper, then tightly cover the dish with foil. 6. Bake for 8-10 minutes or until the snapper is cooked through.
  • In a hot frying pan, quickly cook snow peas in vegetable oil for 2 minutes until slightly charred and tender. Remove from heat and mix in sesame seeds before transferring to a serving bowl.
  • Place the snapper beautifully on a large deep serving platter. Pour the flavorful pan juices from the baking dish around the fish. Scatter the rest of the spring onion and ginger over the snapper. Optionally add the chili and fresh coriander on top. Accompany with the snow pea mixture for a delightful meal.
