Stegosaurus cake

Transport your party to the era of dinosaurs with this epic themed bash. It's a guaranteed prehistoric hit!
Ingredients:
  • 2 x 340g packets golden buttercake cake mix
  • 12 square after dinner mints
  • 33 green jubes, halved (see notes)
  • 14 yellow jubes, halved
  • 6 black jubes, halved
  • 18 spearmint leaves, split
  • 2 white marshmallows, bases trimmed
  • 1 red jube, halved
  • 10cm piece red sour strap
  • Chocolate sprinkles, to serve
  • 500g unsalted butter, softened
  • 750.00 gm icing sugar mixture
  • Green gel food colouring (see notes)
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a 20cm round cake pan and a 20cm square cake pan, then line the base and sides with baking paper.
  • Prepare the packet cakes according to the package instructions. Divide the batter evenly between the cake pans and ensure the surface is smooth. Bake for 40 to 50 minutes or until a skewer inserted in the center comes out clean. Allow the cakes to cool in the pans for 5 minutes, then transfer them to wire racks to cool completely.
  • While waiting, whip up the Buttercream icing by blending butter with an electric mixer for 5 to 10 minutes until fluffy. Slowly incorporate icing sugar, 2 tablespoons at a time, until light. Add green food coloring for a vibrant hue.
  • Place the square template on the square cake and the round template on the round cake. Use a toothpick to mark dots along the template lines on the cakes. Gently remove the templates. Cut the legs, head, and tail from the square cake and the body from the round cake along the dotted lines. Refer to the provided picture as a guide to assemble the cake on a board, securing the pieces together with a small amount of green icing.
  • With a knife, coat the top and sides of the cake with green icing. Position after dinner mints on the back, cutting some to fit on the head. Use the picture for guidance to adorn the body and tail with green and yellow jelly candies. Place black jelly candies at the ends of the legs for claws. Surround the neck with spearmint leaves, gently pressing one end into the icing for stability. Add marshmallows on the head as eyes. Attach a red jelly candy onto the marshmallows for the pupils with a little icing. Slice sour strap into two thin 2mm strips and place on the cake for the mouth. Sprinkle chocolate decorations around the cake on the serving board. Enjoy your creation!
