Make ahead this irresistible no-bake dessert for a perfectly set ice-cream on feast day.
Ingredients:
  • 500ml (Strawberries & Cream) ice-cream, softened
  • 80g jam
  • 500ml vanilla ice-cream, softened
  • 500ml Matcha Green Tea or Bulla Creamy Classics Mint
  • Choc Chip ice-cream, softened
  • 500ml Weis Summer Berries Sorbet, softened
  • 450g pkt Make at Home Unfilled Rectangular Sponge cake
  • Frangelico liqueur (optional), to brush
Instructions:
  • Prepare loaf pan with plastic wrap, leaving excess on the sides. Spread strawberry ice-cream evenly in the pan. Freeze for 30 minutes until set.
  • Spread an even layer of the jam on top of the strawberry ice cream, then add a layer of vanilla ice cream. Ensure the surface is smooth, then place the dish in the freezer for 30 minutes, or until it becomes firm.
  • Add scoops of refreshing green tea or mint chocolate chip ice cream on top of the velvety vanilla ice cream. Gently spread it out to create a uniform surface. Place it back in the freezer for an additional 30 minutes or until it is fully set.
  • Spread the sorbet over the green tea or mint choc chip ice-cream layer, ensuring a smooth surface. Trim the cake to a 12cm x 30cm rectangle and brush with Frangelico, if desired. Gently place over the sorbet, pressing lightly to secure. Cover with foil and freeze for 6 hours or until firm.
  • Carefully invert the cake onto a beautiful serving plate and enjoy right away.
