Create the best homemade vanilla ice cream with easy steps.
Ingredients:
  • 1 vanilla pod
  • 600ml thickened cream
  • 600ml milk
  • 8 egg yolks
  • 310g caster sugar
  • Waffle cones, to serve
Instructions:
  • Split the vanilla pod in half lengthwise with a sharp knife, scrape out the seeds. In a medium saucepan, combine seeds, pod, cream, and milk. Simmer on medium heat (don't boil). Chill a large metal container in the freezer.
  • In a large heatproof bowl, use an electric mixer to beat the egg yolks and sugar until pale and creamy. Slowly add the cream mixture in a thin stream while whisking continuously with a balloon whisk until well combined. Transfer the mixture back to a clean saucepan.
  • Place a saucepan over low heat and cook the mixture, stirring constantly with a wooden spoon until it thickens and coats the back of a spoon, about 5 minutes. Remove from heat and let it cool for 30 minutes.
  • Pass the mixture through a fine sieve into a jug. Transfer it to a chilled metal container, cover with foil, and freeze for 6 hours, or until almost frozen.
  • Break up the ice-cream with a metal spoon and transfer it to a large bowl. Use an electric mixer to beat it until smooth.
  • Return to the metal container and create a smooth surface. Cover with foil and freeze for an additional 6 hours, or until firm. Serve in bowls using an ice cream scoop or scoop into waffle cones.
