Stephan's Broiled Salmon Pesto

Delicious pesto salmon with fresh fillets, tangy lemon, and white wine.
Ingredients:
  • 2 pounds salmon fillets, bones removed
  • 2 lemons, divided
  • 0.5 cup white wine
  • 1.5 cups pesto
Instructions:
  • Prepare a generously oiled baking pan that fits the size of the fish. Gently place the salmon in the pan with the skin-side facing down. Drizzle the juice of 1 lemon and white wine over the salmon, allowing it to marinate for 15 minutes.
  • Position an oven rack 9 inches from the heat source and preheat the broiler.
  • Coat the salmon with a generous 1/4-inch layer of flavorful pesto.
  • Broil until the fish forms a golden crust and flakes easily with a fork, approximately 8 to 10 minutes.
  • Set aside the salmon for a few minutes. Drizzle the juice from half a lemon over the fish and garnish with thin lemon slices.
