Prepare yeasted waffle batter in advance for fluffy, flavorful Belgian waffles to impress brunch guests.
Ingredients:
  • 2.6666667461395 cups unbleached all-purpose flour
  • 3 tablespoons malted milk powder (such as Carnation®)
  • 2.5 tablespoons white sugar
  • 2.25 teaspoons active dry yeast
  • 1 teaspoon salt
  • 1.75 cups whole milk
  • 0.25 cup water
  • 0.25 cup butter
  • 3 eggs
  • 1 teaspoon vanilla extract
Instructions:
  • Combine the flour, milk powder, sugar, yeast, and salt in a large bowl by sifting them together.
  • In a small saucepan, gently heat milk, water, and butter until the mixture reaches 125°F (52°C on an instant-read thermometer, approximately 5 minutes. The butter may not completely melt.
  • Combine the milk mixture with the flour mixture in the bowl, then mix in the eggs and vanilla extract until the batter is well blended. Cover the bowl loosely with plastic wrap and refrigerate for 8 hours to overnight.
  • Heat up your waffle iron as per the manufacturer's guidance.
  • Ladle 1 cup of batter onto the hot waffle iron, close the lid, and cook until the steaming stops, for about 5 minutes.
