Irresistible loaded nachos: Tortilla chips, Jack cheese, chicken, refried beans, sour cream baked to perfection. Perfect crowd-pleasing appetizer.
Ingredients:
  • 1 (8 ounce) skinless, boneless chicken breast half
  • 1 (14.25 ounce) can refried beans
  • 8 ounces corn tortilla chips
  • 1.5 cups grated pepper Jack cheese
  • 0.25 cup chopped green onions
  • 0.5 cup sour cream
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and lightly grease a 9x9 inch baking dish.
  • Place the chicken on a microwave-safe plate, cover with a paper towel, and microwave on high until cooked through, about 10 minutes. Let it cool, then shred with a knife. Set aside.
  • Warm the refried beans in a saucepan over medium heat, stirring until heated through.
  • Start by spreading a layer of half the chips, 1/2 cup of cheese, and green onions at the bottom of the baking dish. Then, evenly spoon the refried beans on top of the chip mixture. Sprinkle another 1/2 cup of cheese on the beans, followed by spreading the sour cream over it. Layer the shredded chicken on top of the sour cream. Finally, add the remaining chips and 1/2 cup of cheese on top to finish it off.
  • Bake until the cheese is gooey and melted, about 15 to 18 minutes in a preheated oven.
