Elevate your tray bake with irresistible sticky chicken.
Ingredients:
  • 1kg Australian Chicken Drumsticks
  • 60ml oyster sauce
  • 60ml plum sauce
  • 2 tsp finely grated ginger
  • 1/2 tsp Chinese five spice
  • 4 plums, halved, stoned
  • 1 bunch pak choy, halved lengthways
  • Steamed jasmine rice, to serve
Instructions:
  • Preheat the oven to 200°C. Make 2 slits in the thickest part of each chicken piece using a sharp knife. Place the chicken in a bowl and evenly coat with oyster sauce, plum sauce, ginger, and five spice by tossing.
  • Prepare a large baking tray by lining it with baking paper. Spread the chicken mixture evenly in a single layer on the tray. Bake for 35 minutes, rotating the chicken occasionally, until it turns a beautiful golden brown and is thoroughly cooked.
  • Place the plum in the chicken mixture on the tray and bake for 10 minutes until the plum is just tender. Then, add the pak choi to the tray and bake for 2 minutes until it just wilts. Serve immediately with rice.
