Try a delicious new take on a classic favorite that will become a must-have in your cookie jar.
Ingredients:
  • 127.50 gm desiccated coconut
  • 200.00 gm traditional rolled oats
  • 180.00 gm firmly packed brown sugar
  • 200g butter, chopped
  • 110.55 gm golden syrup
  • 2.50 gm bicarbonate of soda
  • 54.00 gm maple syrup
  • 375.00 ml dried pitted dates, chopped
Instructions:
  • Preheat your oven to 180C (160C fan-forced) and grease 3 large baking trays. Line them with baking paper. In a large bowl, mix together flour, ginger, coconut, oats, and sugar, creating a well in the center.
  • In a saucepan over medium heat, combine butter, maple syrup, dates, golden syrup, and 1/3 cup cold water. Cook, stirring occasionally, for 5 minutes until the butter melts and the mixture is combined. Let it simmer, then remove from heat. Stir in bicarbonate of soda and let it stand for 2 minutes before continuing.
  • Combine the butter mixture with the oat mixture and mix well. Roll 1 tablespoon of the mixture into a ball, then flatten it between your palms. Place the flattened biscuits on a prepared tray, ensuring they are 4cm apart. Repeat this process with the remaining mixture.
  • Bake biscuits one tray at a time for 12 minutes until golden and firm to the touch. Cool on trays for 10 minutes, then transfer to a wire rack to cool. Serve.
