Elevate your tea time with a decadent spiced sticky date cheesecake slice.
Ingredients:
  • 300g (2 cups) self-raising flour
  • 5.00 gm ground nutmeg
  • 5.00 gm ground ginger
  • 1.25 gm mixed spice
  • 150g butter, chopped
  • 300g (1 1/2 cups) dark brown sugar
  • 300g fresh dates, pitted, chopped
  • 1.25 gm bicarbonate of soda
  • 200ml Pure Cream
  • 80ml (1/3 cup) milk
  • Icing sugar, to dust
  • 250g cream cheese, chopped, at room temperature
  • 55g (1/4 cup) caster sugar
  • 200ml Creme Fraiche
  • 4.40 gm vanilla extract
Instructions:
  • Preheat your oven to 180C/160C fan forced. Grease and line a 20 x 30cm lamington pan with baking paper.
  • Combine flour, nutmeg, ginger, mixed spice, butter, and sugar in a food processor until mixture becomes like coarse breadcrumbs. Split mixture into two bowls. Add one-third of the dates to one bowl and mix well. Transfer mixture to pan and press down firmly using a metal spoon. Bake for 10-15 minutes until firm. Allow to cool before serving.
  • In a food processor, blend cream cheese and sugar until smooth. Add creme fraiche, vanilla, and eggs; blend until combined. Scrape down the edges, blend until smooth. Pour over cooled base and bake for 20 minutes until set. Let cool completely.
  • Create a hollow in the middle of the flour mixture. Combine bicarbonate of soda, cream, milk, eggs, and leftover dates in the well. Mix thoroughly. Pour over the cheesecake layer, smoothen the top, and bake for 55-60 minutes until a skewer comes out clean. Let it cool in the pan, then cut into portions. Serve with a drizzle of maple syrup or a sprinkle of icing sugar.
