Upgrade holiday fruit pudding with sweet dates and rich caramel for a delicious new Christmas favorite.
Ingredients:
  • 150g Mixed Fruit
  • 125ml (1/2 cup) brandy
  • 235g (1 1/2 cups) pitted dates, coarsely chopped
  • 250ml (1 cup) hot water
  • 2.50 gm bicarbonate of soda
  • Melted butter, to grease
  • 200g unsalted butter, at room temperature
  • 320.00g (1 cup, lightly packed) brown sugar
  • 3 eggs
  • 300g (2 cups) self-raising flour
  • 2.50 gm mixed spice
  • 2.50 gm ground ginger
  • Thickened cream (optional), to serve
  • 300ml thickened cream
  • 50g unsalted butter, chopped
  • 1.25 gm ground ginger
  • 1.25 gm mixed spice
Instructions:
  • In a bowl, mix the assorted fruit with brandy. Cover the bowl with plastic wrap and let it sit overnight to enhance the flavors.
  • In a heatproof bowl, mix together the dates, water, and bicarbonate of soda. Allow it to sit for 20 minutes to soften.
  • - Preheat your oven to 180°C and prepare a 2L (8 cup) pudding basin by greasing it with butter and lining the base with non-stick baking paper. - Using an electric beater, whisk the butter and sugar in a bowl until it becomes pale and creamy. - Gradually add the eggs one at a time, ensuring to beat well after each addition. - Gently fold in the brandy mixture, date mixture, flour, mixed spice, and ginger until just combined. - Transfer the mixture into the prepared basin, ensuring to smooth the surface. - Bake for 1 hour and 20 minutes or until a skewer inserted into the center comes out clean. - Let it cool for 10 minutes in the basin before serving.
  • In a saucepan over medium heat, combine cream, sugar, butter, ginger, and mixed spice. Cook and stir occasionally for 2 minutes until smooth. Simmer for another 5 minutes until the sauce slightly thickens.
  • Plate the pudding and pair with the luscious caramel sauce and cream, if preferred.
