Sticky date pudding with butterscotch sauce

Decadently sweet sticky date pudding.
Ingredients:
  • 500.00 ml chopped dried pitted dates
  • 2.50 gm bicarbonate of soda
  • 200.00g butter, chopped
  • 135.00 gm firmly packed brown sugar
  • 150.00 gm self-raising flour
  • 82.50 ml plain flour
  • 2.50 gm mixed spice
  • 270.00 gm firmly packed brown sugar
  • 300ml pure cream
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and generously grease a 6cm-deep, 20cm round cake pan. Line both the base and sides with baking paper for easy removal later.
  • In a saucepan, combine dates and 2 cups of cold water. Bring to a boil over high heat, then reduce to medium-low and simmer for 5 minutes until dates are tender. Remove from heat, stir in bicarbonate of soda, and let cool for 5 minutes before using.
  • Combine butter, sugar, eggs, flours, spices, and date mixture until just mixed. Transfer into prepared pan and bake for 1 to 1 hour 10 minutes until a skewer inserted in the center comes out clean. Let it sit in the pan for 5 minutes before flipping onto a wire rack.
  • In a saucepan over medium heat, blend sugar, cream, and butter until the butter melts. Let it simmer for about 3 minutes until the sauce slightly thickens.
  • Enjoy the pudding warm or cold topped with delicious butterscotch sauce.
