Indulgent winter night comfort dessert.
Ingredients:
  • 1 cup flour
  • 1 teaspoon baking powder
  • 2.5 ounces dark chocolate, grated
  • 7 ounces chopped pitted dates
  • 1.25 cups water
  • 0.25 cup softened butter
  • 0.75 cup superfine (castor) sugar
  • 1 cup firmly packed brown sugar
  • 1 cup butter
  • 2 tablespoons confectioners' sugar for dusting
  • 3 cups vanilla ice cream
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and grease a 12-cup muffin tin. In a small bowl, mix the flour, baking powder, and chocolate together, and set aside.
  • Boil the dates with water until soft in a saucepan. Take off the heat, mix in the baking soda, and let it sit for 5 minutes. Transfer to a blender and blend until smooth.
  • Whisk together 1/4 cup of butter and superfine sugar until fluffy. Add eggs one at a time, beating well. Gently mix in flour mixture and date puree until combined. Spoon into muffin cups.
  • Place in the oven already preheated and bake for 25 minutes. While baking, combine cream, brown sugar, and 1 cup of butter in a saucepan over medium-low heat until the butter melts; then, set aside.
  • After baking the puddings for 25 minutes, carefully take them out of the oven and let them cool in the pan for 10 minutes. Next, transfer the puddings from the muffin tin to a baking sheet. Drizzle 2 tablespoons of sauce over each pudding, then bake for an additional 5 minutes. Enjoy!
  • On a dessert plate, spread a layer of sauce, add a pudding, sprinkle with confectioners' sugar, and top with a 1/4 cup scoop of ice cream. Repeat with the rest of the date puddings.
