Sticky Date Puddings with Caramel Sauce

Indulge in seconds of our irresistible sticky date pudding with caramel sauce and fresh cream.
Ingredients:
  • 250.00 ml pitted dates, chopped
  • ½ cup water
  • ½ cup orange juice
  • 2.50 gm bi-carb soda
  • 80g butter, cubed and softened
  • ¾ cup brown sugar
  • 2 extra large eggs
  • 1½ cups self-raising flour
  • 2.50 gm cinnamon
  • 180.00 gm brown sugar
  • 125g butter, cubed
  • 200mL Pure Cream
  • 1 cinnamon stick
  • Bulla Pure Cream
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced) and line a 5cm deep, 20cm x 20cm oven tray with baking paper. In a small saucepan, combine dates, water, and orange juice. Bring the mixture to a boil, add the bi-carb soda, then remove from heat and set aside.
  • In a mixing bowl, use electric beaters to blend the butter and sugar until fluffy and light. Add the eggs one at a time, ensuring each is fully mixed in before adding the next.
  • Gently blend the flour and cinnamon with the date mixture until smooth. Transfer the mixture to the prepared pan and bake for 30-35 minutes or until a skewer comes out clean when inserted.
  • Combine all the sauce ingredients in a saucepan and bring them to a boil. Allow the mixture to simmer for a few minutes until it becomes smooth.
  • Cut the pudding into portions, transfer to a serving plate, and generously drizzle with caramel sauce and extra cream.
