Indulge in this delectable sticky date self-saucing pudding.
Ingredients:
  • Custard, to serve
  • Icing sugar, to serve
  • 187.50 gm self-raising flour
  • 118.80 gm firmly packed brown sugar
  • 40g butter, melted
  • 169.95 gm milk
  • 250.00 ml pitted dried dates, finely chopped
  • 1.25 gm ground cinnamon
  • 250.00 gm boiling water
  • 90.00 gm firmly packed brown sugar
  • 25g butter, finely chopped
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and lightly grease an 8-cup oven-proof dish.
  • In a bowl, sift flour and add sugar. Create a well in the center, then pour in butter and milk. Stir to combine, fold in dates, and spread mixture into prepared dish. Dust the top with cinnamon and place the dish on a baking tray.
  • Prepare the sauce by combining boiling water, sugar, and butter in a heatproof jug. Stir until the butter has melted. Pour the mixture over the back of a large metal spoon. Bake for 40 to 45 minutes until the top is set. Let it stand for 5 minutes, dust with icing sugar, and serve with custard.
