Sticky pear chocolate mud cake recipe

Elevate a simple chocolate cake with toasted nuts, glossy pears, and whipped caramel cream.
Ingredients:
  • 330g brown sugar
  • 20.00 ml instant coffee powder
  • 250g butter, chopped
  • 200g dark chocolate, chopped
  • 2 Free Range Eggs
  • 225g plain flour
  • 35g self-raising flour
  • 25g cocoa powder
  • Thickened cream, whipped, to serve
  • 45g hazelnuts
  • Dark chocolate, extra, coarsely chopped
  • 4 small firm pears, peeled
  • 220g brown sugar
  • 2 cinnamon sticks or quills
  • 2 whole star anise
  • 1 tsp vanilla bean paste
  • 200ml thickened cream
  • Pinch of salt
Instructions:
  • 1. Preheat the oven to 150°C. Grease a 17cm round cake pan and line it with three layers of baking paper, ensuring both the base and sides are covered. 2. In a large saucepan over low heat, mix together the sugar, coffee powder, butter, chocolate, and 1 1/2 cups of hot water. Stir continuously for 5-7 minutes until the chocolate is melted and the mixture is smooth. 3. Transfer the mixture to a heatproof bowl and allow it to cool for 20 minutes before proceeding.
  • Combine eggs with chocolate mixture in a bowl using a balloon whisk until fully mixed. Add in the mixture of flour and cocoa powder. Pour the batter into the prepared pan and bake for 1 1/2 hours or until a skewer inserted in the center comes out clean. Let it cool completely in the pan before serving.
  • For the caramel pears, combine pears, sugar, cinnamon, star anise, and vanilla in a saucepan filled with cold water. Boil, then simmer on low heat with a piece of baking paper on top to keep pears submerged. Cook for 1 hour until pears are tender. Remove paper, transfer pears to a bowl. Boil the syrup until reduced by three-quarters. Add cream, simmer until thickened. Stir in salt. Cool for 10 minutes, then refrigerate for 1 hour to thicken.
  • In a bowl, swirl whipped cream with caramel sauce. Place the cake on a platter, top with the whipped cream mix, pears, hazelnuts, and chocolate. Finish by drizzling with more caramel sauce before serving.
