Stir Fried Sesame Vegetables with Rice

Vibrant stir-fried vegetables with aromatic ginger and garlic, tossed in peanut oil, topped with toasted sesame seeds. Perfect over fluffy rice.
Ingredients:
  • 1.5 cups vegetable broth
  • 0.75 cup uncooked long-grain white rice
  • 1 tablespoon margarine
  • 1 tablespoon sesame seeds
  • 2 tablespoons peanut oil
  • 0.5 pound fresh asparagus, trimmed and cut into 1 inch pieces
  • 1 large red bell pepper, cut into 1 inch pieces
  • 1 large yellow onion, sliced
  • 2 cups sliced mushrooms
  • 2 teaspoons minced fresh ginger root
  • 1 teaspoon minced garlic
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C). Combine broth, rice, and margarine in a saucepan. Bring to a boil over high heat. Cover, reduce heat to low, and simmer for 15 minutes or until all liquid is absorbed.
  • Spread sesame seeds on a baking sheet and bake in preheated oven until golden brown; then, set aside. In a hot skillet or wok, heat peanut oil and add asparagus, bell pepper, onion, mushrooms, ginger, and garlic. Stir-fry until vegetables are tender-crisp. Add soy sauce and cook briefly. Remove from heat, mix in sesame oil and toasted sesame seeds. Serve over rice.
