Stracci with zucchini and smoked salmon

Quick and delicious salmon and zucchini pasta ready in under 5 minutes.
Ingredients:
  • 1 x 375g pkt fresh lasagne sheets, coarsely torn
  • 2 zucchini, ends trimmed, peeled into thin ribbons
  • 80ml (1/3 cup) white wine
  • 185ml (3/4 cup) thickened cream
  • 125ml (1/2 cup) chicken style liquid stock
  • 150g smoked salmon, coarsely torn
  • 60.00 ml fresh dill sprigs
Instructions:
  • Boil the pasta in salted water until it floats to the surface, usually 2-3 minutes. Add the zucchini for the final minute of cooking, then drain.
  • In a large non-stick frying pan over medium heat, boil the wine until it reduces by half, about 1 minute. Add cream and stock, then cook and stir occasionally for 2 minutes until the sauce slightly thickens. Mix in the lemon juice.
  • Serve the pasta and salmon on plates, drizzle with the creamy sauce, sprinkle with dill, add a dash of pepper, and enjoy right away.
