Traditional Tuscan comfort food inspired by Nonna Miriam, with rich and flavorful sauce served over tagliatelle and meat, paired with your favorite sides.
Ingredients:
  • 1 kg piece of beef chuck sinew removed
  • olive oil
  • 2 red onions
  • 2 carrots
  • 2 cloves of garlic
  • 2 sticks of celery
  • 1 bulb of fennel
  • ½ a bunch of fresh rosemary (15g)
  • ½ a bunch of fresh sage (15g)
  • 250 ml Chianti red wine
  • 2 tablespoons tomato purée
  • 1.5 litres organic meat or veg stock
Instructions:
  • In a snug-fitting casserole pan over medium-low heat, brown the meat in 2 tablespoons of oil. Meanwhile, prepare a soffritto by peeling and roughly chopping onions, carrots, garlic, celery, and fennel. Add to the pan along with tied rosemary and sage. Season with sea salt and black pepper, cook for 20 to 30 minutes until caramelized. Increase heat, pour in wine, stir in tomato purée, and let wine evaporate. Add stock, bring to a boil, place greaseproof paper on top, reduce heat and simmer for about 3 hours until meat is tender, basting occasionally. Adjust seasoning. Transfer meat to a board, slice thinly, and spoon over some sauce. Toss remaining sauce with cooked tagliatelle, top with Parmesan to serve. Enjoy!
