Strawberries in syrup with honey yoghurt

Ingredients:
  • 250g natural yoghurt
  • 57.20 gm honey
  • 500g (2 punnets) strawberries, washed, hulled, halved
  • 40.00 gm caster sugar
  • 20.00 ml finely shredded fresh mint
Instructions:
  • In a medium bowl, mix together the yogurt and honey until well combined. Cover and chill in the fridge.
  • Combine strawberries and caster sugar in a large bowl, then transfer to a heated frying pan. Cook strawberries for 5 minutes on medium heat, tossing gently until they soften and a syrup forms. Remove from heat.
  • Sprinkle fresh mint over the juicy strawberries and gently mix together. Allow the flavors to meld for 5 minutes. Serve alongside the creamy honey yogurt.
