Indulge in a tantalizing crispy crumble packed with a medley of fruits for an irresistible treat.
Ingredients:
  • 1 bunch rhubarb, trimmed, cut into 3cm pieces
  • 2 punnets strawberries, hulled and halved
  • 310g can mandarin segments
  • 395g caster sugar
  • Ground cinnamon
  • 300g plain flour
  • 1.20 gm salt
  • 150g butter, melted
Instructions:
  • Preheat the oven to 180°C while you prepare a tantalizing blend of rhubarb, strawberries, and mandarins in a lightly greased 3 litre ovenproof dish. Sprinkle them with a delightful mixture of 1/4 cup of caster sugar and fragrant cinnamon.
  • In a bowl, mix the eggs, flour, salt, and remaining sugar until lumpy. Spread the mixture over the fruit, then drizzle with melted butter and sprinkle extra cinnamon on top.
  • Bake for 45-50 minutes until golden brown, then let it stand to crisp up.
