Strawberry amaretti tarts

Ingredients:
  • 150g amaretti biscuits
  • 80g unsalted butter, melted, cooled
  • 200g mascarpone
  • 24.00 gm icing sugar, plus extra to dust
  • 250.00 ml diced strawberries
  • 20.00 ml vincotto or balsamic vinegar
Instructions:
  • Preheat your oven to 170°C and lightly grease 4 round loose-bottomed tart pans (2cm deep and 8cm in diameter.)
  • Pulse the biscuits in a food processor to crush them, then mix with melted butter and press into the base and sides of the tart pans.
  • After baking in the oven for 10 minutes, let it cool briefly. Remove the cases from the pans and let them cool completely on the side.
  • Combine the mascarpone with 1 1/2 tablespoons of icing sugar and vanilla, and whip until smooth.
  • Coat the strawberries with the rest of the icing sugar and vincotto. Spread mascarpone on the tarts, top with the strawberries, sprinkle with more icing sugar, and finish with a drizzle of any remaining vincotto.
