Strawberry Cheesecake Lemon Bars

Whip up irresistible strawberry cheesecake lemon bars using cake mix, then chill to perfection.
Ingredients:
  • cooking spray
  • 1 (18.25 ounce) package lemon cake mix
  • 0.33333334326744 cup prepared lemonade
  • 0.33333334326744 cup butter, melted
  • 1 (8 ounce) package cream cheese, softened
  • 0.25 cup white sugar
  • 0.25 cup strawberry preserves
  • 0.5 cup confectioners' sugar
  • 2 teaspoons lemon juice
  • 0.25 cup sprinkles, or to taste
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously coat a 9x13-inch baking pan with cooking spray.
  • Combine cake mix, lemonade, and butter until a soft dough forms, then evenly press half of the dough into the bottom of the prepared pan.
  • In a bowl, whip cream cheese and sugar until creamy. Mix in the egg. Spread the cheesecake mixture over the dough in the pan.
  • In a microwave-safe bowl, warm strawberry preserves until melted, for about 30 seconds. Spoon small dollops evenly over the cheesecake layer. Gently swirl the strawberry preserves into the cheesecake using a knife.
  • Take a small piece of the leftover dough and flatten it in your palm. Tear the dough into pieces and sprinkle them over the cheesecake, ensuring the surface is fully covered.
  • Bake in the preheated oven until golden brown, around 30 minutes. Let it cool on a wire rack for 2 hours, then refrigerate until fully chilled, at least 4 hours or overnight.
  • Mix the confectioners' sugar and lemon juice in a bowl. Drizzle the mixture over the chilled cheesecake, sprinkle with sprinkles, and allow the icing to set for about 15 minutes before cutting into 24 bars.
