Elevate muffins with fresh strawberries, cream cheese, and poppy seeds.
Ingredients:
  • 2 cups complete honey wheat pancake mix
  • 0.75 cup Almond Breeze Vanilla or Vanilla Cashew blend Almondmilk
  • 0.66666668653488 cup sugar
  • 0.33333334326744 cup vegetable oil
  • 1 teaspoon poppy seeds
  • 0.75 cup coarsely chopped strawberries
  • 0.33333334326744 cup strawberry jam
  • 0.5 (8 ounce) package 1/3 less fat cream cheese, cut into 1/2-inch pieces
Instructions:
  • Preheat your oven to 375 degrees F and place paper liners in 12 muffin cups.
  • Combine pancake mix, Almond Breeze, sugar, oil, extract, and poppy seeds in a bowl. Gently fold in strawberries and cream cheese. Spoon in strawberry jam and lightly swirl with a knife.
  • Fill the lined muffin cups and bake until a toothpick inserted in the center comes out clean, about 20-25 minutes.
