Indulgent strawberry rhubarb cobbler with a buttery crumb topping. Perfect with a scoop of ice cream or dollop of whipped cream.
Ingredients:
  • 8 cups chopped rhubarb
  • 1 cup sliced fresh strawberries
  • 0.75 cup brown sugar
  • 0.75 cup quick-cooking oats
  • 0.75 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 0.5 cup butter
Instructions:
  • 1. Preheat the oven to 375°F (190°C) and generously grease a 9x13-inch baking dish.
  • Mix together the rhubarb, strawberries, white sugar, and 2 tablespoons of flour in a bowl, then spread into the baking dish.
  • In a bowl, combine brown sugar, oats, 3/4 cup flour, and cinnamon. Use a pastry blender or 2 forks to blend in butter until crumbly. Sprinkle over rhubarb mixture.
  • Bake in the oven until the cobbler bubbles and turns lightly golden, for about 45 minutes. Enjoy hot or cold.
