Strawberry shortcake

Impress with this stunning and tasty strawberry shortcake, ideal for high tea or any special event.
Ingredients:
  • 500.00 ml sliced strawberries, hulled
  • 80.00 gm (1/3 cup) caster sugar
  • 160ml milk
  • 300g plain flour
  • 10.00 gm baking powder
  • 100g unsalted butter, chopped
  • 165.00 gm strawberry jam
  • 200ml thickened cream, lightly whipped
  • Icing sugar, to dust
Instructions:
  • Preheat your oven to 180°C and prepare a 20cm springform pan by lining the base and greasing the sides.
  • Place luscious strawberries in a bowl with a touch of sweetness from half of the sugar, gently mix together, and let them mingle for a bit.
  • In a bowl, whisk together the egg and milk. In a separate large bowl, combine flour, remaining sugar, baking powder, and 1/2 teaspoon salt. Add butter and rub it in with your fingertips. Pour in the egg mixture and stir with a fork until well combined.
  • Press the dough evenly into the pan, then bake until beautifully golden for 15-20 minutes. Remove from the oven and allow it to cool.
  • To serve, gently separate the cake layers. Spread the bottom half with jam, layer with cream, top with strawberries, then place the top half back on. Dust with icing sugar before serving.
