Strawberry-Vanilla Freezer Jam

Whip up a sweet and tangy strawberry freezer jam by combining mashed strawberries with sugar, lemon juice, vanilla, and pectin. Deliciously fresh and easy to make!
Ingredients:
  • 1.5 pounds fresh strawberries
  • 1.5 teaspoons fresh lemon juice
  • 1 teaspoon vanilla bean paste
  • 3 tablespoons instant pectin
Instructions:
  • Prepare the strawberries by washing, hulling, and coarsely chopping them in a large glass, ceramic, or stainless steel bowl. Mash them to a fine texture using a potato masher for 1 or 2 minutes. Mix in sugar, lemon juice, and vanilla bean paste, stirring well. Allow the mixture to sit for roughly 30 minutes until the berries release some juice. Gradually add pectin, incorporating 1 tablespoon at a time and stirring thoroughly after each addition. Let it rest for 5 minutes to activate the pectin.
  • Fill the wide-mouth, half-pint jars with jam, leaving 1/2-inch space at the top. Use a damp paper towel to clean the rims, then gently close the lids and place the jars in the freezer for about 5 hours until completely frozen.
  • Secure lids tightly before storing. Keep in the freezer for up to 1 year or in the fridge for up to 1 month.
