Cozy cabbage rolls filled with a flavorful mix of beef, pork, veal, and rice, topped with a savory tomato sauce - perfect for chilly winter evenings.
Ingredients:
  • 1 medium head cabbage
  • 1 pound ground beef
  • 0.5 pound ground pork
  • 0.5 pound ground veal
  • 1 cup cooked rice
  • 0.5 cup chopped onion
  • 0.25 cup minced fresh parsley
  • 1 large egg
  • 2 large cloves garlic, minced
  • 0.25 teaspoon ground black pepper
  • 1.5 teaspoons dried thyme, divided
  • 1.5 teaspoons dried basil, divided
  • 1.5 teaspoons dried oregano, divided
  • 1 (28 ounce) can crushed tomatoes with tomato puree
Instructions:
  • Place cabbage in a microwave-safe casserole dish, core-side down. Add 1/2 cup water, cover, and microwave on high for 10 to 15 minutes until outer leaves are soft. Drain and cool.
  • Once the cabbage has cooled, heat the oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together ground beef, pork, veal, rice, onion, parsley, egg, garlic, salt, and pepper. Stir in 1 teaspoon each of thyme, basil, and oregano until fully incorporated.
  • Peel off 12 outer leaves from the chilled cabbage and trim thick stems for easier rolling. Save extra cabbage for later or discard.
  • Shape the meat mixture into 12 even portions. Spoon each portion onto the stem end of a cabbage leaf and roll it up, folding in the ends. Arrange the rolls with the seam side down in a single layer in a casserole dish.
  • Mix crushed tomatoes with the remaining fragrant thyme, basil, and oregano, then generously drizzle over the cabbage rolls.
  • Bake covered in the preheated oven for 1 hour until the meat is fully cooked. Use an instant-read thermometer to ensure it reaches at least 160 degrees F (71 degrees C. Rest for 10 minutes before serving.
